Terrain: Stari Grad Plain , the ancient agricultural land known as Hora Pharou (greek name), a  mosaic of soils dominated by red clay and limestone

Farming: No irrigation, minimal amount of spraying in Spring and mid-Summer months. Considered to be one of the most important native grapes on Hvar island, grapes are harvested from different locations and blended together to bring balance in acidity and alcohol. Pošip is early ripening so the harvest in the Carić vineyards starts with this grape, during August. While Pošip is known as an indigenous grape of Korčula island, it is similarly been present on Hvar throughout history, and during the last decade Hvar has become recognized as an important area for Pošip production.

Vinification: Hand-harvest followed fermentation in stainless steel tanks, with temperature control. The wine is kept in stainless steel for 6 month and than bottled.

Notes: Pošip grown on the sunny slopes of Hvar can tend to show more intensity than those of Korčula, and this is no exceptioun, starting on the nose, showing off floral and stone fruit aromas and wet stones. On the palate, it is packed with yellow peach and green apples, along with a savory and green finish.  A refreshing wine served chilled and a great pair with seafood with some richness, particularly the traditional Hvar fish strew – Hrvatska Gregada – as well as cheeses or creamy seafood pasta, such as shrimp risotto.

The island of Hvar is home to a rich winemaking history and mix of indigenous grapes, thanks to its location in the center of the Adriatic sea as an important stop on trade routes throughout Mediterranean history. Dating back to the 4th century to the ancient Greeks, Hvar has maintained a culture of winegrowing that has perpetuated to modern times, where the Carić family looks to follow in the footsteps of the island’s history.

Ivo Carić founded the winery in 1993, in the small village of Svirče in the heart of the island. Joined in 2011 by his wife Ivana, and nephew Ljubo, today they all work together running the small island winery. Ivana remains very active in the Hvar winemaking community, serving as the president of the Hvar Winemakers Association for 12 years, and spearheading the Viticulture Collection in Pitve, illuminating the rich history of the islands winemaking.
